    Observation: Food in prep cooler and True under counter cooler is cold held at 61 and 54°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F

    Observation: Cole slaw in True under counter cooler has exceeded its date mark.
    Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked.

    Observation: There was no sanitizer in the bar dishwasher. Sanitizer container was empty.
    Correction: Provide training to employees on proper use and concentration of sanitizer and repair or adjust warewashing equipment to provide proper sanitizer concentration. Replaced sanitizer container.

    Observation: Soups were improperly reheated. Soups were being heated in a hot water bath. Soups were at 152 degrees after 3 hours..
    Correction: Adjust procedures and methods to properly reheat food. Reheated soups on the stove top. Reheated soup to 175 on stove top then placed in hot water bath.
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
    Observation: There is no sanitizer in the final rinse of the bar dishwasher. The sanitizer container is empty.

    Observation: Drinking cup without cover was observed in food preparation area.
    Correction: Provide approved beverage container in food preparation area.
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site)
    Observation: Wiping cloth used for wiping counters stored on counter.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Corrected by providing a bucket with a bleach water solution.
