Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours. Discarded beans.

Observation: The sanitizer spray bottles is not being used according to EPA registered label use instructions and was at >200 PPM.
Correction: Provide training to employees on proper use and concentration of sanitizer. Emptied bottle and refilled from sanitizer sink.

Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. Pre cool beans with an ice bath and place in smaller containers to allow faster cooler.

Observation: Beans in True cooler are not cooling properly and are at 80°F after overnight.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours. Use small shallow metal pans to cool beans, leave uncovered until beans are cooled.

Observation: Dishes were not being sanitized after washing.
