Observation: Pizza cutters, tongs, and pizza peel used with potentially hazardous food (temperature controlled for safety) were cleaned after 4-hours. The facility opens at 10:00 am and the inspection was at 2:30. The utensils used for this time period had not been washed rinsed and sanitized. Managment corrected at the time of inspection.

- Critical: PHF/TCS, COLD HOLDING
Observation: Cold held items in the reach in cooler were at between 48 and 58 degrees F. The thermometer in the reach in was at ~45 F.
Correction: The refrigerator was turned to the highest setting, however, the temperature of the thermometer in water in the reach in cooled to only ~46 F a half hour after turning the machine down. Therefore, the district manager called for refrigeration service. The service is scheduled for this afternoon. If the reach in does not cool to 41 F or lower immediately after service, the food in the lower section of the reach in must be moved into the walk in cooler. The upper section of the reach in is holding at 41 F. The condenser fins have a considerable amount of dust on the outside surface, which could be the reason the unit is not maintaining temperature. Cold held products will be required to be disposed of if the situation is noted on future inspections. Correct By: 27-Jan-2015

Observation: A bag of corn meal was on the floor in the food prep area.

- HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED
Observation: Handwashing sink does not have wrist blade handles. This has been noted on previous inspection reports. Wrist blade handles have been installed in the past, the removed and replaced due to leaking.
Correction: The hand wash sink faucet is require to have "wrist-blade" handles. Install wrist blade handles by no later than 2.27.2015. Correct By: 27-Feb-2015
- TOILET FACILITIES - CLOSING TOILET ROOM DOORS
Observation: Rest room door is not self closing.
Correction: Install a self closing mechanism on the rest room door. Door should close completely without assistance. Correct By: 27-Feb-2015

- Critical: SEWAGE - CONVEYING SEWAGE
Observation: Drain of the far right compartment of the four compartment sink is leaking. Some of the water from a leaking drain (maybe the left compartment drain) appears to be migrating behind the wall that leads to the storage room. Further, water that leaks from the drain, to the floor drain is being tracked on the floor throughout the facility.
Correction: Repair the drain and monitor for future leaks. Correct By: 31-Jan-2014
- FOOD TEMPERATURE MEASURING DEVICES - PROVIDED
Observation: A thermometer could not be located in the main deli top cooler. The cooler is separated into left and right areas.
Correction: Provide one hanging thermometer in each side of the reach in cooler. The thermometers need to be located in areas that make them easy to read and easily accessible, not covered by food containers. Correct By: 24-Jan-2014
