    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • Critical: PACKAGED AND UNPACKAGED FOOD - NESTING OR RAW ANIMAL FOODS STORED TOGETHER (corrected on site)
    Observation: Raw chicken was stored above raw beef in the walk-in cooler.
    Correction: Store raw animal foods in order of decending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.
  • Critical: PHF/TCS, COLD HOLDING (corrected on site)
    Observation: Tamales and tomato sauce in the prep cooler (lower) were cold held at 55°F and 56°F respectively although the ambient temperature of the prep cooler was at 40°F and other food was holding at 41°F or below. The operater had no explanation for this and denied the food was cooling or sitting out prior to the inspection.
    Correction: Monitor practices so that cold potentially hazardous food is maintained at 41°F or below. Note: The tamales and tomato sauce were discarded during the inspection.
