    Observation: sliced ham and diced tomatoes held on top line of large prep cooler was being cold held at [45 ]°F. amount being held in container was more than unit was designed to keep cold. Food in question was discarded during inspection

    Observation: Line prep coolers, front counter pie cooler, and single door PH line cooler are not equipped with an integral or permanently affixed temperature measuring device.
    Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
