Observation: The back room contains unnecessary items and a lot of stuff on the floor which provide harborage conditions for insects and rodents.

Observation: Cheese slices, butter in the pop prep cooler at 49°F in the upper left side.
Correction: Maintain cold potentially hazardous foods at or below 41°F
These items were discarded today while onsite.
- Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING
Observation: Staff indicate they are washing & rinsing dishes but not sanitizing.
Correction: Clean and sanitize all utensils and equipment before contact with food.
All equipment and food contact surfaces (prep tables included) need to be washed, rinsed and sanitized after use.
- EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
Observation: The cooler contains a piece of soiled cardboard on the shelf to hold the portion sauce cups.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials. Use a tray for holding sauce cups on the shelf and properly clean tray when empty, before filling.
