Correction: Remove all unnecessary items from this area to minimize harborage for pests.
MAINTAINING PREMISES, UNNECESSARY ITEMS AND LITTER (repeated violation) Observation: Equipment in the kitchen area that is not used any more.
Correction: Items that are unnecessary to the operation of the food establishment shall be removed from the premise.
CLEANING, FREQUENCY AND RESTRICTIONS (repeated violation) Observation: The warewashing area has floors and walls that are soiled with food.
The 4 comp sinks were dirty.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.

Critical: PHF/TCS, COLD HOLDING Observation: Cheese slices, butter in the pop prep cooler at 49°F in the upper left side.
Correction: Maintain cold potentially hazardous foods at or below 41°F
These items were discarded today while onsite.
Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING Observation: Staff indicate they are washing & rinsing dishes but not sanitizing.
Correction: Clean and sanitize all utensils and equipment before contact with food.
All equipment and food contact surfaces (prep tables included) need to be washed, rinsed and sanitized after use.
EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED Observation: The cooler contains a piece of soiled cardboard on the shelf to hold the portion sauce cups.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials. Use a tray for holding sauce cups on the shelf and properly clean tray when empty, before filling.
