Observation: A Chlorine and Quaternary test kit are not available for checking sanitizer concentrations for the chemical dishwasher and sanitizer used for sanitizing food contact surfaces.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.

- CONSUMER ADVISORY
Observation: There is a consumer advisory listed on the menu, but the food items that the consumer advisory applies to are not denoted.
Correction: Denote food items that the consumer advisory for animal foods served in a raw or undercooked condition applies too.
- HAND DRYING PROVISION
Observation: A single towel is provided for hand drying at the bar, the towel is not apart of a continous towel system.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
- TOXIC SUBSTANCES - SANITIZER CRITERIA
Observation: Dawn dish soap solution was being used as a cleaner and sanitizer when cleaning meat slicer. Soap is not a sanitizer. Orange cleaner is also used as sanitizer for food contact surfaces, a cleaner is not a sanitizer.
Correction: Sanitizer shall meet the requirements under 40 CFR 180.940. Suggested bleach water solution as sanitizer.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: Boxed frozen food and packaged frozen raw meats are currently being stored on the floor in the walk in freezer.
Correction: Store all food items 6 inches above the floor.
- KITCHENWARE AND TABLEWARE - HANDLED TO PREVENT CONTAMINATION
Observation: It was observed that spoons and ice cream scoop utensils are stored in the kitchen where the food or lip contact surface could be contaminated.
Correction: Store utensils in a manner to avoid contamination to the food and lip contact surface.
- TOILET FACILITIES - RECEPTACLES - COVERED
Observation: Female bathroom is not provided with a covered waste receptacle.
Correction: Provide a covered waste receptacle in female bathroom for use with sanitary napkins.
