Observation: Chemical dishwasher was tested to have a chemical concentration below 50ppm.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Adjust chemical concentration in dishmachine to at least 50ppm prior to opening on Friday.
- CONSUMER ADVISORY
Observation: No consumer advisory provided on for the chalk board menu. Menu items change from day to day
Correction: be sure to provide a consumer advisory for items it applies too.
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A Chlorine test kit is not available for checking sanitizer concentrations for chemical dishwasher in the kitchen.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- HAND DRYING PROVISION
Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying. An automatic paper towel dispenser is on-site but not yet installed.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
- THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
Observation: True Two Door Prep Table and the One Door Prep Table are not equipped with an integral or permanently affixed temperature measuring device. Cooler's were empty at time of inspection, but were measuring at 41 according to my thermometer.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- TOILET FACILITIES - RECEPTACLES - COVERED
Observation: Female bathroom is not provided with a covered waste receptacle.
Correction: Provide a covered waste receptacle in female bathroom for use with sanitary napkins.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: One of the cooling units in the walk in cooler is attached to a piece of wood, the wood was sealed but is starting to peel away allowing debris to begin to build up. The ceiling in the women's bathroom has stains from water marks and is beginning to cave inward. There are also cracks/chipping on the floor in the hallway outside the kitchen and also on the step walking into the walk in cooler.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable. Owner has plans in place to repair in the wood piece in the walk in cooler as temporary measures and the other items listed also have plans in place before opening.
