Observation: There was less 10 ppm chlorine in the final rinse of the dishwasher..
Correction: Provide training to employees on proper use and concentration of sanitizer and repair or adjust warewashing equipment to provide proper sanitizer concentration. Changed containers of chlorine. Sanitizer was too diluted.

Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.

Observation: Wiping cloth used for wiping counters stored on counter.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

Observation: Wire shelving in walk in cooler is in need of cleaning.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
