Observation: Employee observed handling ready to eat foods with bare hands. Discussed during inspection using one glove hand and or utensils.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

Observation: Ice inside bar ice bin for drinks was observed coming into contact with red bull drink stuck into the ice and the handle of the ice scoop. Ice is a food item, keep the ice bin free of any other items and the ice scoop with the handle extended.
Correction: Food contact surfaces of equipment shall be cleaned and sanitized before use with food.
- EQUIPMENT AND UTENSILS - CUTTING SURFACES
Observation: Cutting board on soup table noted with deep cuts and discoloration.
Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces of walk-in cooler noted with mold on the walls and ceiling. Use bleach solution to clean interior to prevent mold spores from being inhaled and inside food items..
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The floor in the kitchen and behind the bar noted with exposed wood. Re-tile so that floors are a smooth, cleanable surface.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.

Observation: Deli meat, potatoe salad, burger pattys, roast beef are improperly date marked. Any potentially hazardous food held in the cooler that are not used in 24 hours need a date mark. At time of inspection all items were date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- HAND DRYING PROVISION
Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying at bar sink.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Ice scoop was improperly stored, noted handle touching the ice.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
