Observation: Rice cooling from 9:00am at 47 °F after 7 hours.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours. Rice was disposed of by employee voluntarily. Correct By: 26-Oct-2015

- PROPER COOLING METHODS - CRITERIA
Observation: Improper cooling methods are observed for fried rice in plastic bin on counter and in walk-in cooler. There is too much rice cooling in a plastic bin and bin is covered with plastic wrap trapping in warm air.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. Rice was placed in two shallow containers uncovered in walk-in cooler. Correct By: 26-Oct-2015

Observation: No handwashing signage provided at wait/sushi handwashing sink.
