Observation: Raw beef was stored over raw fish in the prep cooler.
Correction: Prevent nesting of raw animal foods and store raw animal foods in order of decending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.

Observation: Multiple food items are past the 7 day expiration date (meatloaf dated 1/21, chili and meatballs dated 2/4). These items were disposed of at the time of todays inspection. Multiple items were not date marked, including deli meat, sliced tomatoes.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Scoops without handles are used and stored in product.
Correction: Store in-use utensils in the food item with handle extended, or on a clean surface.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloth used for wiping counters stored on counters throughout the facility.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

Observation: The cook was observed wiping his tongs on a towel between uses.
Correction: Change methods or procedures to protect foods from contamination.
- UTENSILS, EQUIPMENT AND LINENS - PRESET TABLEWARE
Observation: The preset tableware is not properly covered to prevent contamination of food contact surface.
Correction: If preset, utensils shall be protected from contamination by being wrapped, covered or inverted. Any exposed, unused settings shall be removed when the consumer is seated or unused utensils shall be removed after the consumer is seated and be properly cleaned and sanitized.

Observation: Unisex employee bathroom is not provided with a covered waste receptacle.
Correction: Provide a covered waste receptacle in female bathroom for use with sanitary napkins.

Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
- WIPING CLOTHS - USE LIMITATION - FOOD SPILLS
Observation: Wiping cloth used for food spills are not maintained dry and are being used for other purposes.
Correction: Wiping cloths for food spills shall be dry and only used for that purpose.

Observation: The new ice machine has blue tape that requires removal and the interior of the Danby cooler has duct tape on the inside of the door.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
- THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
Observation: The two door True preparatory cooler, the Danby homestyle cooler, and the True three door cooler are not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
