Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: Lemons were stored under pans of raw roasts in the walk in. Hamburger patties were stored over ready to eat chicken in the food prep cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. This item was corrected at the time of this inspection.
Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: Egg salad and hard boiled eggs in the walk in cooler, and sandwich meats in the food prep cooler were not dated to keep track of seven days of refrigeration.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. The operator corrected this item at the time of this inspection.
Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site) Observation: The glasswashing machine in the bar is labeled for use with iodine or chlorine sanitizer. A quat type sanitizer was being used at the time of this inspection. No quat residual was evident on testing the final rinse.
Correction: Set up this glasswasher to sanitize according to the manufactuer's instructions. The operator stated he will clean and sanitize all glassware in the kitchen's dishwashing machine until the glasswasher is set up properly.
