HANDWASHING FACILITIES - NUMBERS AND CAPACITIES Observation: A separate handwashing sink is not provided in the kitchen/food prep area. One compartment of the 3 compartment sink is used for washing hands. A different water heater was installed, making the the water temperature very hard to control, often scalding hot.
Correction: A separate approved handwashing sink needs to be installed. Properly designed and operated handwashing sink needs to be available at all times.

Chocolate and vanilla custard mixes in hoppers - temperatures were not at proper temperatures (temps listed above).
Correction: Maintain cold potentially hazardous foods at or below 41°F. Custard mixes held in hoppers must be consistently agitated to maintain proper temperatures.
