IN-USE UTENSILS, BETWEEN USE STORAGE Observation: The ice scoop was improperly stored with handle touching ice.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
FOOD CONTACT SURFACES - NON TCS/PHF -FREQUENCY Observation: The food slicer is not following the cleaning frequency.
Correction: Follow cleaning schedule as required in 4-602.11 (D) or clean in-use utensils every 4-hours.

Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
FOOD CONTACT SURFACES - SOILED Observation: The following areas shall be cleaned:
-Inside the ice machine
-Clean the coffee machine at the basket insert area

FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE Observation: No thermometer is present for monitoring temperatures in thin mass foods. Facility has a laser that will not properly monitor internal temperatures.
Correction: Provide a thermometer capable of taking temperatures in thin mass food items.
FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS Observation: Clean gaskets on the reach-in cooler at wait station.
Clean dough press more frquently.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
