    Observation: Some RTE foods (cooked chicken/cut tomatoes are not date marked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: The ice scoop was improperly stored with handle touching ice.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
  • FOOD CONTACT SURFACES - NON TCS/PHF -FREQUENCY
    Observation: The food slicer is not following the cleaning frequency.
    Correction: Follow cleaning schedule as required in 4-602.11 (D) or clean in-use utensils every 4-hours.
  • UTENSILS, EQUIPMENT AND LINENS - AIR-DRYING REQUIRED
    Observation: Clean utensils (bar glasses) are being stored or stacked without being air-dried.
    Correction: Air dry all clean utensils before storage and before contact with food.

    Observation: Raw shelled eggs stored above cooked and ready-to-eat food in two different cooler units.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • FOOD CONTACT SURFACES - SOILED
    Observation: The following areas shall be cleaned:
    -Inside the ice machine
    -Clean the coffee machine at the basket insert area
    -Mixer base
    -Wheels of equipment at the cook line
    -Dough press

    Correction: Maintain food contact surfaces in a clean condition.
  • EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
    Observation: -Chest freezer in poor repair and shall be repaired or replaced.
    -Door gaskets for the wait station reach-in cooler shall be replaced.

    Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
  • EQUIPMENT AND UTENSILS - CUTTING SURFACES
    Observation: Cutting board at the salad prep Victory cooler.
    Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.
  • WALL AND CEILING COVERINGS AND COATINGS (repeated violation)
    Observation: Ceiling tiles missing in the kicthen. Replace tiles
    Correction: Provide wall and ceiling coverings that are smooth, easily cleanable and nonabsorbant.
  • LIGHT BULBS - PROTECTIVE SHIELDING (repeated violation)
    Observation: Lights located in near the cook line are not shatter resistant.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.

    Observation: No thermometer is present for monitoring temperatures in thin mass foods. Facility has a laser that will not properly monitor internal temperatures.
    Correction: Provide a thermometer capable of taking temperatures in thin mass food items.
  • FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
    Observation: Clean gaskets on the reach-in cooler at wait station.
    Clean dough press more frquently.

    Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
  • WALL AND CEILING COVERINGS AND COATINGS
    Observation: Ceiling tiles observed missing in the kitchen area. Replace missing tiles.
    Correction: Provide wall and ceiling coverings that are smooth, easily cleanable and nonabsorbant.
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights located near cook line are not shatter resistant. Cover observed missing.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
