  • Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
    Observation: Employee observed handling ready-to-eat food with bare hands.
    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
  • Critical: PHF/TCS, COLD HOLDING (corrected on site)
    Observation: Food in large prep cooler is cold held at 51°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Repairman started defrosting coils and will restart the compressor.
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
    Observation: There was no sanitizer in the final rinse of the dishwasher.
    Correction: Provide training to employees on proper use and concentration of sanitizer and repair warewashing equipment to provide proper sanitizer concentration. Replaced sanitizer container and primed pump.
  • CONSUMER ADVISORY
    Observation: No consumer advisory provided on the menu.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
  • CERTIFIED FOOD MANAGER – REQUIREMENT
    Observation: There is no Wisconsin Certified Food Manager for this establishment.
    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 6 months. Employee states that she took the course in August and sent her money in and received a certificate. Need to have the certificate on site before next inspection.
  • IN-USE UTENSILS, BETWEEN USE STORAGE (corrected on site)
    Observation: Ice scoop was improperly stored in the ice.
    Correction: Store in-use utensils in the ice with handle extended or on a clean surface.
  • FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
    Observation: The egg cases are stored on the floor in the walk in cooler.
    Correction: Store all food items 6 inches above the floor.
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights located in kitchen are not shatter resistant.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
