  • Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site)
    Observation: Dish machine sanitizer was low and very weak. Machine tested at about 10 ppm chlorine.
    Correction: During the inspection, a temporary bottle of unscented bleach was added, the line primed and then machine reached the minimum of 50 ppm. Install a new container of dish machine sanitizer. Date the container to make sure it is replace every 2- 3 weeks or less.
  • WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
    Observation: Obtain (find) the chlorine test kit for the dish machine and the Quat test kit for the sanitizer dispensor
    Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
  • HAND DRYING PROVISION (corrected on site)
    Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying in kitchen. .
    Correction: Towel dispensor was restocked during inspection. Post provided handwash signs in kitchen and mens room. Use a soap dispensor instead of the condiment container for handsoap at bar. Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: The floor by the grease tank and other areas are dirty.
    Correction: Clean the physical facilities at a frequency necessary to keep them clean.

    Correction: Provide hand soap at handwashing sink to facilitate proper handwashing. Also move paper towel dispensor adjacent to handwashing sink
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
    Observation: Wiping cloth used for wiping counters stored on bar counter.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
