SHELLSTOCK IDENTIFICATION Observation: There are no identification tags or labels available for shellstock.
Correction: Provide shellstock tags to ensure that the shellfish are from approved sources. Discard shellstock where tags are not available or incorrect. Keep the shellstock tags for at least 90 days.

Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
