Observation: No thermometer is present for monitoring temperatures in thin mass foods.
Correction: Provide a thermometer capable of taking temperatures in thin mass food items. Thermometer was found at inspection. Keep it available for use for all staff.

Observation: Employee was observed eating on preparation counter.
Correction: Eat only in designated areas away from food preparation. There are other designated areas here to use. Employee corrected at inspection.

Observation: Wood pallets are being used in the walk-in freezer. Also, duct tape is being used around spray nozzle at dishwasher.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials. Provide cleanable food storage racks and remove duct tape from nozzle.
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION (corrected on site)
Observation: The front preparation cooler lid is stored on the floor.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor.

Observation: The floors under equipment and where the wall meets the floor need extra cleaning.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
