Observation: The walk-in cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- WAREWASHING MACHINES - OPERATING INSTRUCTIONS
Observation: The dishwasher chemical supply line is clogged. Attempt made at inspection to unclog.
Correction: Repair machine to operate as designed. Sinks are available for wash, rinse, sanitize.
- BUILDING CONSTRUCTION
Observation: The fire suppression system has not been serviced since 2013 per tag information.
Correction: Food establishments shall meet the wisconsin commercial building/fire safety code.
Service the fire system. Service called at inspection.

Correction: Provide a copy of bacteria and nitrate result from the well serving the restaurant. Per Dan, a new well was installed summer of 2013.
