Observation: Beans in back WIC has exceeded its date mark or is not provided with a date mark. Some containers of beans marked with dates 11/13 & 11/20
Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked.
- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
Observation: The Ultra San chlorine sanitizer is not being used according to EPA registered label use instructions and is at 0 PPM.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
Ben Reis from EcoLab provided service while on-site - sanitizer registered at 50ppm.
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A chlorine test kit is not available for checking sanitizer concentrations today.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - NOT EXPOSED TO SPLASH AND DUST (corrected on site)
Observation: The bacon is cooling in an area subject to potential contamination on the drainboard of the dishmachine.
Correction: Store food in areas not exposed to splash, dust, or other contamination.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR (repeated violation)
Observation: There is a lot of food stored on the floor in all 3 walkin coolers and in the dry storage area.
Correction: Store all food items 6 inches above the floor.

Observation: No handwashing signage provided at back kitchen handwashing sink & mens restroom.
Correction: Provide handwashing signage at all handwashing sinks used by food employees.

Observation: Employee observed handling buns, tortilla shells, tomatoes, lettuce, etc with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
Good handwashing was observed while on-site today.
- Critical: PACKAGED AND UNPACKAGED FOOD - NESTING OR RAW ANIMAL FOODS STORED TOGETHER
Observation: Raw beef is stored above raw port in the white walkin cooler.
Correction: Store raw animal foods in order of decending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.
- LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME
Observation: Cornstarch is stored in unlabeled container.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: There is a lot of food items stored on the floor in the dry storage area and in the walkin freezer.
Correction: Store all food items 6 inches above the floor.
- THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
Observation: Artic Air refrigerator in kitchen does not have a thermometer for monitoring temperature is at or below 41F.
Correction: Provide thermometer.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The amount of floor storage of food, equipment and other items makes it difficult to routinely clean the floor.
Correction: Store items off the floor in the walkin cooler, walkin freezer and in dry storage for ease of cleaning.
