    Observation: Replace the damaged chest cooler in the basement. Lid is in poor repairs.
    Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.

  • Critical: COOLING
    Observation: Mash potatoes in the prep cooler at the cok line measured a range of 44-50°F in various spots. Product was cooked yesterday. Discard potatoes due to improper cooler. Review proper cooling with staff. Prep cooler should be used for maintaining temperature only. Use the walk-in cooler, ice baths, and or ice wands to aid with rapid cooling.
    Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.
  • Critical: PHF/TCS, COLD HOLDING
    Observation: -Several foods(cooled soup, cooked rice, meat sauce, and cheese in the walk-in cooler measured 44-45°F. The ambient air tempearture of the cooler measured 44 F. Repair the cooler and move foods to another cooler to ensure foods are held below 41 F. Service tech arrived and adjusted the thermostat on the cooler Ambient air temperature now measures 37 F. Rice is now measuring 40 F. Corrected during.
    -Bagged rice in the prep cooler at the cook line measure 50 F due to the product being stocked above the load zone. Place rice below the load zone of the pan and keep back up supply in the lower portion of the cooler. Rice was removed and placed in the cooler.

    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINENCE - COMMON NAME-WORKING CONTAINER
    Observation: Working containers of bleach,window cleaner, and degreaser not labeled with contents.
    Correction: Label working containers.
  • FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
    Observation: The breading and cut potatoes observed stored on the floor on the cook line.
    Correction: Store all food items 6 inches above the floor.

    Observation: Chlorine sanitizer in the wiping cloth buckets measured >200 ppm. Reduce the amount of chlorine use to ensure 50-100 ppm of chlorine sanitizer.
    Correction: Sanitizer shall meet the requirements under 40 CFR 180.940.
  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: Clean knives on the cook line area observed improperly stored wedged between equipment.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
