The walls and ceilings shall be in good repair and easily cleaned. OBSERVED WATER STAINED CEILING TILES OUTSIDE OF WOMENS WASHROOM AND FOOD DEBRIS ON WALLS IN PREP AREA. MUST CLEAN AND MAINTAIN UNCLEAN WALLS AND REPLACE DAMAGED CEILING TILES.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. NO METAL STEM THERMOMETER FOR FOOD HANDLERS. MUST PROVIDE AND CALIBRATE METAL STEM THERMOMETER FOR FOOD HANDLERS.

ALL FOODS STORED IN COOLERS MUST BE DATED & LABELED. All food not stored in the original container shall be stored in properly labeled containers.
GASKETS OF COOLER DOORS & INTERIOR FLOOR OF SMALL COOLER AT FRONT COOK'S LINE MUST BE FREE OF FOOD DEBRIS/SPILLS. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
BROKEN FLOOR SEAL AT DISHROOM AREA MUST BE RE-SURFACED. FLOORS ALONG WALLBASES UNDER 3-COMP SINK & AROUND GREASE TRAPS MUST BE KEPT CLEAN. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
BROKEN LIGHT SHIELD ABOVE REAR COOK'S LINE MUST BE REPLACED. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.
