I made satx's King Ranch Casserole again last night, this time with extra onion and extra olives and extra cheese. It's become my go-to recipe, it seems. My husband looooooves it. So do I.

Tonight, I think I'll just throw a frozen pizza in the oven and make a side salad with it. That said, we'll both probably be drooling over teh King Ranch leftovers, but I'll save that for Friday... and Saturday.

How about grilled chicken, okra and tomatoes and maybe mashed pots?

Is that an invitation? If so, my frozen pizza can wait until tomorrow night.

PS. I've never had okra before, but I keep hearing about all of you having it. I need to broaden my horizons, I think, and check it out.

Grilled chicken (some pieces with bbq sauce, some just seasoned with salt/pepper/garlic powder), wild rice, steamed broccoli, salad.

King Ranch Casserole sounds so good, and I haven't made one in months. I may have to do it some time soon. Actually, we tend to like it leftover almost better than when its first made. It's one of my family's all time favorite dishes, and they otherwise hate casseroles!

When our oldest son got at job working at a sorority house on campus, he was so thrilled that King Ranch was one of the cooks standard meals. Not only does he get to work in house full of beautiful young women, but he also gets a good home cooked meal every night, including one of his favorite things.

My hubby insists that it is an acquired taste (not one he has acquired, either ). I have only made it a few times due to that, and have probably never made it the right way. We had an American friend who lived here and when I saw fresh okra (not common here) I bought it to make it for him - I had read about how it should be battered and fried and he said no, to just boil it. It turns quite slimy. Underneath the slime, I thought the flavour was somewhat like fiddleheads. Not sure what to think about the slime though. Maybe I should have battered and fried it?

Definitely fry it. Fried, it is wonderful. Any other way, it makes me gag. It's like snot!

Oh, and at DH's request, we are going out for Thai tonight. In this heat, I'm fine with someone else doing the cooking.
