I still have a couple of cooked, breaded chicken cutlets left. I think I'll make chicken croquettes out of them for tonight and finish them up. Instead of making a gravy for it, I'm thinking of using a thick version of canned split pea soup. I'll probably defrost leftover mashed potatoes I had frozen, make potato patties out of them and toss them into the frying pan as long as I'll have it out. Still unsure if/what any other sides.
We are having a deconstructed cabbage roll casserole! (Say THAT 5 times fast! LOL) Also some broccoli and cheese rice, pinto beans and cornbread.
