This is the way I cook my salmon croquettes. It is meant to be a very simple recipe, but of course you can add onions, celery, or whatever you want.
Salmon Croquettes
1 can salmon (I always remove as many bones as possible, some people don't) Flour (I don't measure this, it's just enough to take some of the "sticky" out - maybe 3 Tablespoons or so) salt pepper egg
Combine all and form into balls about the size of a medium egg or so. Deep fry until light golden brown. Eat with ketchup or whatever you like.
sounds yummy, Melissa on the Food Network had a recipe for salmon patties a few years ago; very similar and we absolutely loved them. I have made it a couplel of times. She also used mayonaise I think, but don't remember for sure.
I usually make them myself when I remember to get the crab meat from Costco. However, these came from our local farmer's market. They are Henretty's, which is a well-known Delaware name and the crab cakes, while a little pricey, are very good. When I make mine, I usually saute extra and then freeze them. I usually get about 6 or so from a one-pound container.
I don't need to hear this, you are just making me too hungry. We were supposed to go to a wine tasting this afternoon, complete with appitzers, so I kept breakfast very light, almost nothing. We had dinner early yesterday. Well, I am a crazy old lady and screwed up on the time for the wine tasting and we arrived an hour early. What did we do? We bought a couple of bottles of wine, came home and I called my daughter. Here I am, an hour later, still with an empty stomach, have had a glass of wine and you are talking Crab cakes...

I'll have some of your wine with my crab cakes, and you can have some crab cakes with the wine. A wine tasting is always a fabulous way to spend the day. An hour early just gives you more time for wine!
