3 choices: Middle Eastern Chicken w/red wine, ginger, soy sauce & sesame seeds. Strangely yummy!
Szechwan Chicken w/cashews, mushrooms, gr. peppers, onions! Awesome! African Beef w/rice, kidney beans, green peppers, curry and crushed red peppers. Very Good!

Along with Ratatouille & Green Beans w/coconut, coriander, turmeric, ginger. An Indian dish!

Sweets: Baked Bananas w/cream cheese & rum and Island Rum Cake. OMG!!! What was I thinking, as I'm experimenting w/Caribbean desserts!!! 1/3 Cup of rum for an 8X8 cake!!! Oofta Wihwee!!! Way too much rum!!! Even with a big gob of whipped cream, I can still taste the rum!!!

Left over baked macaroni and chicken quesadilla's. I have some cooked chicken left over and some tortilla's.

sounds like a winner, next week we will go back to real food, fresh food, whatever and the freezer will be empty of all the containers or most anyway. Tonight we are having enchalladas, refried beans and rice: Yes, out of the freezer....but that is close to the end.

At first I thought you meant macaroni and chicken quesadilla together. I now think you mean: chicken quesadillas and left over mac; right?

I also have 3 chicken leg quarters roasting in the oven. I can make chicken salad from them and my husband can have some tonight. I don't eat dark meat so I'll have the chicken breast meat from last night and make quesadillas

Change around! Yesterday I had planned on chicken a la king and, apparently, thought that I had more prep completed. I looked at what I had left to do when I got home, used the frittata leftovers, rested and then made the chicken. It's very pretty and I can't wait - haven't had it in a long time. I'm having this over noodles with a green salad and haven't decided on dessert. (I didn't get my Jello made yesterday, either!). Was thinking about a conjealed salad when I saw some cream cheese but I think I will do the baked bananas. No rum -- let's see what else I can add!
