With patience to spare tonite (rare for me) I made Italian Chicken/Ham Croquettes. Mix ingredients together, into the Fridj for 2 hours, then dip patties in flour, egg, bread crumbs, return to Fridj for one more hour, then fry it in oil! Was it worth it? Yes and No! Delicious though!

For sweets: Oatmeal Butterscotch Bars and a new chocolate layered-bar recipe (so-so!)

And no-yeast baked Irish Wheat Soda Bread and a Plain Irish Soda Bread!

Now! If I weren't single, with time on my hands, and being married with kids, I'd buy an extra freezer for all those Banquet TV dinners I'd be serving and eating! Lol! How-how-how-oh-how does one do it, with a family to feed every night!!!

I made codfish in the oven, below a layer of creme fraiche, västerbotten cheese, chopped parsley, French mustard and garlic. Served with a salad, mashed potatoes and white wine. I can post the recipe later on, if anyone's interested... Was so incredibly delicious!

We're cleaning out the inventory tonight. This is what needs to be taken care of:

1. A large piece (or a piece and a bit) of shepherd's pie
2. About 1/3 of a chicken pot pie
3. One serving of homemade spaghetti sauce (with ground turkey in it)
4. The rest of the roasted cauliflower

I don't know how the two of us are going to manage it, or in what combinations and permutations, but this stuff is NOT going back in the fridge. Besides, I need room in there -- after dinner, we're going to Trader Joe's to pick up a boatload of stuff because we're having guests tomorrow.

Beef tips over "arsenic rice"- last of the roast and
Death by Rice is not such a terrible way to go.

Broccoli with cheese sauce
ripe nectarine, strawberries and blueberries with Yogurt and sprinkled with Granola from my Harry and David gift basket my daughter sent for my Birth Day last week...Yummy
