I'm getting brave----tonight I'm going to give lacey's chicken cacciatore a try! Sounds so good and I've never made chicken cacciatore before. I have everything here except that certain kind of tomatoes and who knows we may go to the store and I'll see if I can find them! If not I'll just use what I have on hand here. I believe I have everything else here already. Wish me luck!

Morning all, have no clue what is for dinner tonight. I really need to do some food shopping seeing as how I haven't been to the store in a couple weeks. Trying to hold out and see if hubby will go, lol. Good luck Cyn, I know it will turn out great!

I didn't take anything out of the freezer this morning. I think I'll make grinders and if one of the kids wants theirs heated, that's all good too.

On nights like this, when i haven't taken anything out of the freezer, I'll usually do sandwiches or "breakfast" for dinner.

Wow Cyn go for it-you could use a large can of tomato sauce if in a pinch but I like the texture of the Italian tomatoes. If you use the sauce one add basil.

I have diced tomatoes just not that particular brand and I know how you've talked about that brand! But if I don't get it then I will work with what I have here! They aren't Italian but I can always add Italian spices! I also just might use angel hair pasta as hubby really likes that kind of pasta!

I have a lot of chicken tenders. Trying to figure out what to do with it. Lacey's chicken cacciatore sounds really good, but I like to use dark meat for something like that. Chicken thighs like Lacey did...
I'm thinking maybe creamy Cajun chicken with pasta. Oh, I don't know...

Lacey used both thighs and breasts--don't see why you couldn't just use the tenders?? I'm just using the thighs!

Yes I used both boneless skinless thighs and breasts. Tenders might be okay but may break up.

Tonight we're doing our Cheers thing. This way Mr. L can have his mashed,stuffing, rolls, cake with his chicken and sausage and I can have chicken (skin removed), salad and fruit.

You can make chicken parm. with your chicken tenders. Just bake them, add a little cheese and sauce and serve over pasta. I've done that a couple of times.
