Since DH got out of the hospital, we went down to the lake house - he tends to relax and take it easy there. Had to come into town to got to the Doctor, but we are headed right back! I want to drop a hook in the water!
We are going to throw some filet mignons on the grill and have a good ole baked potato and salad!
I was planning to roll with plain old burritos/tacos, but does anyone have a fairly simple/easy idea for a Mexican meal with a bit more substance?
I am kind of at low tide, creatively speaking, this morning.
It would be nice to serve him something a little more impressive.
Fajitas are easy - and if you are short of time/energy you can buy any or all the trimmings ready-made...salsa, sour cream, guacamole, shredded cheese and green salad, refried beans, plus corn chips and flour tortillas of course.
Then at the last minute, flash fry the meat with onions, peppers and mushroom (which you can buy as a frozen mix too ) and throw in the fajita seasonings.
It's a fun meal to sit around the table making up your rolls

Still had some leftover maccaroni so I threw them into a pan with some oil, onion, eggs and some bits of cheese.
Also put a pizza into the oven and sliced a quarter of a pineapple into slices. All put on the table and shared with DH.
Kat, good hear your husband is healing well. Enjoy good meal and relax.
We are doing tacos and Mexican rice tonight. Simple, easy,now I don't have to think about it.
