Good morning! Sorry your BFF is moving away from you Kshe!! Skbs gave you good advice though.

Tonight I am not sure what's for dinner. Most likely leftover pasta from yesterday and salad, which is fine for me because it is quick and easy. It is freezing here today too!! 1 degree on my way in to work. BRRRRR

Morning everyone, tonight for dinner grilled chicken, some sort of rice dish (to be determined). Hope everyone is staying warm and safe from the ice storm moving across the country.

Tender BBQ pork with a baked potato and coleslaw..All I need to do is bake the taters. Wife has done the hard part already.

I am making American Chop Suey for lunch......once we talk about it....I have to make it.

Oh so that is what it is called Elston. I make that all the time but call it Meat and mac.

It is tastey and easy with plenty of variation to suite anyone.

American Chop Suey: Thats what we call it here in New England.....and on some diner menues it just says, "Chop Suey" if you were expecting chinese chop suey...you would be surprised.

Well my plans were thrown off by, off all things, the Chinese new year, so we ate out and went to the theater.

So I haven't made this recipe, so can't vouch for it yet. But it sounds good and I'll definitely be trying it.

Apricot Beef Stir-Fry

Ingredients:
1 can (15 oz) apricot halves
2 tablespoons cornstarch
3/4 cup beef broth
2 tablespoons soy sauce
1&1/2 pounds boneless beef round or sirloin steak, cut into thin strips
1 tablespoon oil (recipe says canola)
2 cups broccoli florets
1/2 cup chopped onion
1/4 teaspoon minced garlic
Hot cooked rice

Directions:
Drain apricots, reserving 1/4 cup juice. Cut apricots into quarters and set aside. In a small bowl, combine cornstarch, broth, soy sauce, and reserved apricot juice until smooth, set aside.
In a large skillet or wok, stir-fry beef in oil until no longer pink. Add broccoli and onion; stir-fry for 2-3 minutes or until vegetables are crisp-tender. Stir sauce and add to pan. Bring to a boil; cook and stir until thickened. Add reserved apricots and heat through. Serve over rice.

Serves 6

Did I miss something? Last thing that I saw that you talked about was the lobster last night and the scallops tonight. What is american chop suey?

Jessiegee-there was a discussion a few weeks ago. It's basically ground beef browned with onions, celery then mixed with canned tomatoes/tomato soup, mixed with cooked elbows. Very comforting food.
