Good morning all ! I agree LaceyEx , it is terrible when they mess with the clocks like this. Weiner schnitzel tonite and pan fried potaoes with onions and mushrooms. ( my comfort food.)

I agree LaseyEx..who can consider what to make for dinner when the sun is barely up? Geeze, I sure hope the new time kicks in pretty soon in my head!! I'm sure by next week I'll be doing better. Elston, hope the packing is going well..I remember it all to well. Now I'm on the other end unpacking, still!! Let's see, second cup of coffee and still not one idea for dinner. Will have to post later with that. Kshe, your job sounds like it fits you so well. You are so busy but still take out time to come here and post--thanks!!

Daytripper-would love that but there is no veal out here-it's verboten!!!! Probably could use prok cutlets.

Yes pork cutlets will work just fine. I've done it quite often

This time change is a tough one - it was dark when I had to get up this morning....argh!!!! I like the cornbread idea too - toasty warm cornbread with some butter and I'll heat up some baked beans to serve over the top of it. YUM! Leftover cornbread gives me yummy breakfast for tomorrow too!

One of these days I've got to add homemade tortillas to the repertoire - they're supposed to be easy but still seems like adding a lot of time to dinner prep! I know they'd have made the tacos even better though.

I just use store-bought corn tortillas (preferably the smaller more "authentic" looking ones, not the mission brand) and wrap them in a couple layers of damp paper towels and throw them in the microwave for a couple of minutes to soften.

You use two tortillas per taco or they get too messy.

DH said we HAVE to have them again tonight.

Yesterday I tried something new.....I had more than the usual crowd for Sunday dinner and I wanted to add a couple more veggies....so I went to the fridge and freezer and I took a bag of Broccolli Stir fry veggies and about 1 TBLS water and simmered till cooked....drained then added monterey jack cheese and sharp cheddar(placed in a casserole dish)....Then I melted some butter, and crushed up garlic/herb crackers and added that to butter and placed on top of veggies. Baked for about 20 minutes. It was a huge hit.
