Last night's bacon, avocado, and baby spinach leaf sandwiches on lightly toasted sourdough bread may actually be the tastiest dinner I've ever had.

I know it doesn't sound like much, but DAY-UM.

We're not counting fat grams here.


Tonight? I have no idea.

Hey, that sounds like a great dinner to me Debsi---would love it!!
I have a question here---I have left over mashed potatoes and want to make potatoe pancakes...do I just add and egg and make them into patties and fry them up in oil??? Also I am going to try something new here--yellow neck squash breaded in Panko bread crumbs...anything I should know or add other then Italian seasoning and S&P??

I think 'traditional' potato pancakes are made from grated, raw potatoes. Maybe add some cheese to the mashed/egg mixture and see what turns up?

I'm just gonna make a simple mushroom/ham omelette for dinner.

Cyn are you dipping the squash in the dressing or eggs?

Maybe when you form potatoes just lightly flour before frying.

I've made mashed potato cakes before, but I haven't had much luck.

I was inspired by a recipe in the Little House Cookbook which tries to give the recipes as they were described in the books.
So in this case, it is just left-over mashed potato fried in fat with nothing else added.

My potato cakes usually stick to the pan or suck up too much fat and get really greasy. I like Lacey's flour idea, it might help. Also maybe a light coating of breadcrumbs would be good.

Yes potato pancakes or latkes, are made of grated raw potato, sometimes some grated onion, a very little flour and a beaten egg.

I have tried to fry mashed potatoes in little cakes with limited success; there is usually too much liquid in the potato....but I think my dad used to make mashed potato and corn cakes.....but I don't know his recipe....I believe we had them with baked beans and I think it was a way to use up left overs and feed a hungry family on a very limited budget.....I seem to remember they did hold together and got a golden crustiness and were good with *****lily or ketchup.

*******well the all american relish is an obscenity to C-D; it must be a computer program....or else someone has a really sick mind...especially considering some of the bilge that doesnt get censored--

Hmmm. Not sure what the all-american relish Elston is referring to. Tonight it is the dentist - Yuck - and then probably a simple dinner of salmon burgers and steamed veggies.

Evening all...tonight we cleaned out the freezer of bass and catfish, which I fried up for the kids. (Not enough for me and the hubby though so we will be having nachos.)Hope everyone has a good evening.
