Tonight I treated my son and got Abuelo's. The best Mexican food in Tulsa (I think) Chicken fajita chimichangas with rice and charro beans. The caramel dulche de leche cheesecake (which is to die for) for dessert. Plus chips and queso. Happy 4TH ALL!

Chicken stir-fry with clean-out-the-fridge leftover vegetables and teriyaki sauce. Brown rice on the side.

The birthday boy requested chicken brats, which I served with a fruit salad, buttered rice, and broccoli. We topped it off with chocolate wafer ice box cake. OMG, that cake is delicious! We have it only once a year, and I forget how yummy it is.

This week's big cook-out, so I don't have to cook for another week: a brimming stockpot of Kentucky Burgoo (4lb. of chicken, 2 lb. each of pork and beef, w/lima beans, corn, potatoes, celery, carrots, cabbage, chile peppers, crushed tomato sauce, parsley) and Layered Gr. Beef Corn Pie, a delicious recipe I doubled.

And then the disaster dessert! Let it be a warning, if you're going to make a graham cracker crust, to check for the Expiration Date on a box of Graham Crackers. Time flies, didn't realize the Exp. date was 8/13/13. Some products can be used well beyond their Exp. dates, but not Graham Crackers! Nasty, nasty taste! Completely ruined my Banana Split Dessert!

Just got back home from San Francisco. I want something tasty and filling after eating the junk on the plane.

For dinner:

Fried chicken
Mashed potatoes w/ gravy
Cole slaw
Sauteed spinach with garlic and chili peppers

Today is the first day of our annual canning marathon so we will be really tired. After going to DD to spend the day chopping, cooking, cleaning up etc. she and hubby will come over here for ribs. Spoiled brat will put the ribs on later this morning. I think all we are going to have with the ribs is salad and maybe broccoli. DD and hubby are on the low carb kick right now.

We have tonight salmon ,rice and a cucumber salad.For dessert meringue with vanilla ice cream and fresh mashed strawberries.

salmon fillet
salt/black pepper
garlic cloves
fresh dill
lemon slices
green onions

wrapped in foil and baked in the oven
