Me too...I want EVERYTHING in it! But not a fan of meat in my egg dishes either.

Out of the choices, I'd choose the Spanish Tortilla...that is a mighty fine looking dish! LOL

Geez my mom made tons of tortillas when we were little, so much so that I can eat them anymore.

I prefer omelets myself.

I'd opt for the spanish tortilla, pretty nice. Although my favourite baked egg dish would probably be fluffy eggs but they are a hassle to make.

Geewillikers, I was all ready for the corn tortilla wrapped around a nice runny fried egg.

I like flan. I put it in there because it is very eggy and it is baked.

I accidentally discovered my magic bullet makes super fluffy eggs! Try a blender if you don't have a magibullet.

I prefer the almost runny french style of scrambled eggs.

And correct those tortillas have thinly sliced potatoes. My favorite is potatoes and chorizo. (again the Spanish type dry cured with wine)
