I've led a sheltered life in a city that was a culinary wasteland until very recently. I've only had omelets until I had a fantastic quiche last year. I haven't been able to find another good one. I've always wanted to try a frittata. I've never heard of a strata or tortilla. That picture makes me want to try a tortilla.

The fluffy eggs I mean are when you separate the white from the yolk, whisk up the whites like you are making a meringue, then spoon the white onto a piece of toast leaving a hole in the middle where you put the yolk, then bake til cooked. A real hassle but looks pretty cool!

Of the choices offered above it would be the Omelet. But I always just scramble my eggs or fry an egg and put it between two pieces of bread, put mustard on it and have an egg sandwich.

I think all of those can be modified so much with different ingredients that it's hard to make a choice! I'd take any one of them.
