I know this will sound crazy, but I've been thinking a lot about my Mom today. She passed April 2001. She and I used to always get McDonalds fish sandwiches on occasion for lunch on Fridays during Lent when I was a teenager. I just have a craving for one, so I'll have one and maybe a small fry. I have two meaty boneless, skinless chicken breasts defrosting, some frozen broccoli, fresh carrots and onions and celery. I'll work some kind of magic to come up with a good meal for the 4 of us. Also just made some lemon poppy seed dressing to go on romaine lettuce with craisins, blue cheese, pear and apple.

I had one today with a large order of fries for lunch. They have some deal going on, 2 for 4 bucks things. Always one of my favorites at Mcdonalds. And no, that doesn't sound crazy.
I'm parting from lent tonight as we bought 2 corned beefs for St Patties day (which we will make on sunday) one big and another small. I could eat the bigger one on sunday myself alone. So I'm cooking the smaller corned beef for dinner tonight adding some potatoes and carrot's. I love corned beef and it should be done by eight and I'll be a couple of pounds heavier for sure! TGIF!
