Default always fun to try something new!!

Tried something new today ... I had some cranberries left from a Krusteaz fat-free cranberry-orange muffin mix (I use very little of the can when I make the muffins) so I thought, Hmmm, I bet that would taste good with a bit of mustard over pork. I had some boneless pork chops so I threw 1 into a very small slow cooker, put the cranberries on top, added a couple of squirts of mustard (probably a teaspoon or two), and added a quarter of a chopped sweet onion over that. (I am laughing as I type this -- you can see why I started with ONE pork chop -- I had no idea how all this would come out! )

I made my usual big pan of veggies, tonight carrots + asparagus + zucchini + sugar snap peas + mushrooms + sweet onions. I also wilted some fresh spinach in a separate pan and added that to the larger pan. Here's how everything turned out ...



The pork chop was quite good -- the mixture of sweet from the cranberries with savory from the mustard and onions was nice. I do think I like cranberry-mustard mixture with turkey more than pork though (I've had it on turkey sandwiches after Thanksgiving before and it was delicious!).

The veggies were as always yummy! No dessert tonight ... I've been grading most of the day so haven't moved much. I may bake brownies tomorrow ...

Thai spicy salad with raw shredded cabbage, shredded carrots, shredded ginger pork, in a sweet ginger dressing.

Tonight I am making spinach manicotti and a little side garden salad. I have a loaf of cheese bread to serve with it.

I am making for tonight large meatballs in a tomato curry sauce with basmati rice,homemade plain yogurt,lassi/water to drink and for dessert a slice of apple cake with a cup of Darjeeling tea.

We were too tired to cook last night so it was simple fried eggs over white rice with garlic chili sauce. Tonight will also be something simple, black bean noodles. Tomorrow, I will actually cook since it's St. Paddy's day. Will make guinness braised corned beef and bubbles and squeak. Green milkshakes and guinness cupcakes.
