The tortillas are homemade low carb flour tortillas. They were delicious. The pork ... I put a couple of boneless chops in the crockpot with onion and garlic, coked on low for 3.5 hours. They were falling apart when I took them out to shred. With that, I heated a can of retried beans in the crockpot, mixing in the juice and cooked onion/garlic, then served the beans with a dollop of salsa, a tablespoon of shredded cheddar, and a dollop of sour cream on each serving. Absolutely delicious with a little hot sauce.

Tonight will be lamb stew, this is the recipe I have been using lately Irish Stew With Lamb And Guinness Recipe - Food.com

I will serve it in a colcannon "bowl".

Today, what are many of us having? I am sure we will be eating Corned beef and cabbage. Mine will go in the crock pot in a few hours, as soon as we finish breakfast. I will probably make a small fruit salad to go with it. Our daughter is coming for dinner and loved corned beef. Her hubby is out of town on business, isn't a corned beef fan, this works out great for her.

Corned beef & cabbage here, yes, with roasted red potatoes (just a couple), and ersatz Irish soda bread.

Tonight a meatloaf loaded with onions,dill,curly parsley,salt/black pepper,egg,bun served with mashed green peas Mashed Peas Recipe - Allrecipes.com and salt potatoes and a Guinness beer. For dessert mint chocolate chip ice cream fitted in small meringue wreathes. Later a cup of Irish coffee.
