What's For Dinner Tonight? - 2015 (mushrooms, coffee, horseradish, barbecue)

A meatless Monday meal -- squash casserole made with stuffing instead of rice as I did last week.

It's an early St. Pat's dinner. Corned beef & cabbage with orange horseradish cream.

Fried catfish, corn bread, collard greens, side salad, and cole slaw. Southern banana pudding for dessert.

Hot Italian sausage on the grill, baked french fries, and a salad. Beer to drink because I'm taking tomorrow off.

What part of the country do you live in? It's sold at Wal-Mart in Oklahoma. It might not be available in some places.

This might sound like a stupid question, but what is casserole? I know it's a dish, but I don't know the typical characteristics of a casserole.

A casserole is a one-dish meat(or cheese)-and-vegetables-and-sauce meal that isn't "constructed." Lasagna wouldn't really be a casserole, but a baked ziti with all the same ingredients and just a different pasta shape would be a casserole.
