I wanted to make corned beef today, but it was super expensive, and there was really no need for just me and the hubs...especially when he's not a huge fan (he'd eat it but isn't a fan of leftovers anyway). SO, I made baked barbecue chicken, baked quartered red potatoes with olive oil, salt, pepper, garlic powder, fresh rosemary and parmesan cheese, and cabbage. I did tint our beers green, though!
It was pretty warm here today and I didn't want to put on the air so I decided not to cook an Irish stew all day on my gas stove and bake a cake. We had meatloaf, asparagus, corn and salad.
Enchiladas or tacos tonight with mexican Chipotle rice mixed with veggies.
