I'm probably going to pick up a rotisserie chicken on the way home for the Mr. and the kids. Steam some broccoli, and use up the rest of my lentils and rice.

I think I'll try making Paula Deen Wiener Schnitzel with ground veal. Also Rachel Ray Lemon Spaghetti, which is one of our favorite things.

Red bell peppers were on special offer yesterday so today we are having stuffed red peppers with andouille and quinoa and steamed veggies to go with.

Shrimp & cucumber appetizers (a creamy shrimp spread on cucumber rounds)
Hot corned beef on rye sandwiches
Potato salad
Coleslaw - garlic pickles and
Pistachio pudding cake for dessert

I'm making some "Irish" Beef Stew to serve in a bowl with mashed potatoes. I've dyed some coconut green to sprinkle on white frosted cupcakes. All this for my Vietnamese daughters who were so excited to wear green today
