Well, husband made a decision - today is going to be another REALLY crazy day at work - probably really long - and I'm TIRED!!!!!!!!!! So he said we're going out to lunch, then we're going to get our Christmas tree. And he also said there's a McDonald's or Arby's run in my very near future!!!!! YAY!!!!!!! I can get away from the darn laptop and phone for a little while!! (He's sick and tired of seeing me losing it at the end of each month - I work from home and my job is VERY labor intensive around the end of the month. I won't even go into the inability of grown people to manage their calendars so that all the "you must do this this second!!!!" nonsense could be avoided by their ANSWERING EMAIL AS IT COMES IN versus all at once just prior to the sky falling!
And I didn't answer the question of what's for dinner, did I? Arby's. Or McDonald's. But I'd prefer Arby's.

penne pasta with roasted head of garlic, handful of cherry tomatoes from the freezer, fresh parsley and basil and oregano, onion(all sauteed in butter) and fresh parmesan.Maybe some chicken broth or white wine if it's too dry.. I'm just gonna wing it. I found half a box of cooked penne pasta in the freezer from when my daughters made too much and I need to use up the frozen tomatoes soon.
Two-day turkey soup. I simmered the carcass (frozen from Thanksgiving) for hours last night, then put the soup in the fridge to separate the fat. The seasonings from the roasted turkey really enhanced the flavor of the soup.
Got pork chops brining in salted water, a little sugar, whole peppercorns, cloves and bay leaves. I may either toss them in the oven or throw them on the grill pan. Haven't decided yet. Couscous and veggies for sides.
