We are having Scandinavian open-face sandwiches with a choice of pickled herring, roast beef, Gravlax, Jarlsberg cheese, various types of greens, cucumber and boiled eggs. The sandwiches will be served with salted boiled potatoes.

I found a recipe for Peruvian coal roasted chicken that I wanted to try today but the salmon thread on the forum here is calling for salmon, asparagus, baked potato, and salad. I am even thinking of scrapping the potato and replacing it with the Caribbean corn on the cob from the recipe section here and jerking the salmon.

The pork I started on the smoker yesterday is now resting. I'll pull or probably shred it later. I ended up finishing it with three hours in the oven with the vinegar sauce.
I made an Alabama style white bbq sauce to serve with it. They have a choice of potato buns, sliced red onion and corn on the cob for sides. I think I will drink Red Stripe with dinner.

We do the same thing using a Raclette grill. It's tasty and a lot of fun.

Sounds like a meal.

BTW - Alabama white sauce was invented in North Alabama, fifteen miles west of where I currently reside.

Okay, I'll bite -- what's LTPMM?

(And I'd like a bite of that yummy sandwich too. )
