Today for my very early dinner, I had eye of round roast beef. I knew this was a tough cut of meat (I got it on sale for $1.99/lb.), so I searched online for recipes and found a high-temp one: basically 500 degrees for 5-7 minutes per pound, then 2 hours with the oven door shut.

I was a bit skeptical so I did 475 degrees for 9 minutes (my roast was just 2.5 lbs.), then turned the oven off. Was going to otherwise follow the recipe exactly (I often try to do that my first time with a new recipe), but something seemed "off," so I checked after 1 hour and the roast was ALREADY close to 125 degrees (for beef, that's the medium-rare range, which is what I am typically shooting for).

I took it out and let it rest for about 10 minutes ... then had a lovely roast beef dinner.



Have to say, though, that that recipe is REALLY bad for small roasts. If I had cooked it for 12-1/2 to 17-1/2 minutes at 500 degrees, as the recipe stated, then left it in the oven for a full 2 hours (and some versions of the same recipe say 2-1/2 hours!!), it would have been awful -- WAY overdone!

I think it will be great for sandwiches over the next few days!

Yesterday was my 43rd birthday - I made seafood gumbo over Creole rice the night before (for 8 guests); my husband grilled pork ribs (South American style), Mexican corn on the cob and spicy cabbage. We had carrot cupcakes with cream cheese frosting and lots of Veuve. It was a good birthday for me.

We figured out rest of meal. We'll add peas and rice.

Grilled shrimp and veggie kabobs, Caribbean Corn on the Cob (thanks Dawn) and a huge green salad with a honey lime vinaigrette dressing.

Happy birthday, Praline!

The unseasonal July rain (none today ) extended the local tomato crop.

I'm making 5 pounds worth with 2 pounds of mushrooms and a few other vegetables and fresh herbs into pasta sauce. I'll freeze most of it for days when I'd kill for a fresh garden tomato.

Tonight we will have some of the sauce over purchased spinach-cheese ravioli. If I have any energy left, I will make buttermilk ranch dressing and a romaine salad.

Shoulder tenders/ chuck medallions

Grilled them up medium rare

This is a muscle from the chuck and a rare muscle that is lean and tender
They are the same size as a pork tenderloin but beef
And. Very tasty
They've been popular in some regions. Like flat iron steaks

Diet. Coke
