Tonight was ring macaroni salad with tuna. It is not the night for it, cold and rainy. I just returned from a visit to PA, where I grew up. I picked up a box of ring macaroni because we can't get it here and made the salad the same way my mom used to. The only difference was the relish. Mom's relish was homemade, mine is store bought. Turned out well enough.
Pan seared chicken breasts with a sun dried tomato cream sauce with lemon zest, and roasted aspargus.

One of the things I love about this thread is the regional food things we get to learn about. I’d never heard of ring macaroni, so I googled it, of course
going to do some chinese cooking: bok choy, snow peas, fried Mexican rice and either egg rolls or pot stickers. What is Mexican fried rice? It is left over rice from Fridays tacos mixed with shrimp, peas, ginger and carrots. Ok, so it might sound strange but it will have to work.
