Looks like a beef night for everyone tonight. We had a little steak with rib rub on it, sautéed onion & orange bell pepper, and California mix veggies.

I ate a late and filling lunch today, so dinner was an Asian chicken salad and an orange. Drank iced tea.

Yuuuum!

I’m not too proud of tonight’s dinner — Italian sausage tortellini from Wally World (sausage not particularly noticeable ) with jarred red sauce. Pretty good though.

a lot of things came together so that we ended up with takeout from our favorite food cart- the triceratops plate (ok so it's paleo, we didn't know when we first ordered but it is Delicious)-
its chipotle mashed sweet potatoes with a grilled avocado stuffed with cauliflower rice, an excellent baby kale salad with tomatoes, roasted carrots with dried cranberries and of course, being paleo a large skewer of juicy steak grilled to medium rare....

a nice treat.

Tonight I am grilling up a couple filet mignons for me and the kids and a porterhouse for the husband. Usually I just salt and pepper my steak but I like my filet mignon marinated in Texas Pete and melted butter. I like to top it with blue cheese. Not sure if I will make baked or roasted potatoes. I
Either way I am making a carrot salad.

Happy Thursday!

We are getting the fridge cleaned out to leave on vacation and we will be running errands all day today, so dinner is what is left in the fridge. even though we don't leave for a week. We are having left over chicken tetrazzina, salad and that is about it.

No, just changed my mind, we are having tacos using up the left over pot roast from a few days ago. I will probably do rice as well.
