Yesterday was bookclub , so last night was leftovers -- fritatta with potatoes, Italian sausage, peppers & smoked provolone, and green beans roasted with tomatoes & mushrooms and drizzled with good balsamic, with chocolate cake & pistachio gelato for dessert.
Tonight will be cabbage marinara and leftover cake & gelato.
I've been busy all weekend prepping some beautiful produce to freeze. Today I made stuffed green peppers from the remaining peppers. I bought more of the delicious green beans we had last week so we'll have more tonight along with new potatoes from the farmers market.
I made enough stuffed peppers for planned leftovers for tomorrow and have 1/2 dozen more freezing for quick meals this winter.
After the busy weekend of food prepping, I'm going to sit outside on the deck and enjoy a well deserved Goose Island 312.
Went out for early dinner with friends.I ordered smoked fillet of trout with warm salad of French lentils and beetroot horseradish.Had a glass of local Ontario white wine.For dessert Jamocha ice cream.
Leftover Sweet and sour meatballs over rice. All the delicious, without the work.
