We are below the estimated track and are under a "Tropical Storm" warning. It is the poor folks on Grand Bahama island that need the prayers and best wishes as it hasn't moved for like 36 hours. We can drive across to the west coast, but those folks are stuck. The only good thing, if you can call it that, is the wind speed as of the 5 AM update has dropped to 120 MPH. Still a very dangerous condition.

Last night we had some leftover braised short ribs from the freezer which I turned into a shredded beef sauce over pasta with a salad. My wife also made a one pot dish of ground beef, rice, frozen vege medley, Mexican spices and canned tomatoes. This can be heated up quickly if we need to leave as we'll take our induction burners with us. We have leftover green chili stew as well.

This will irritate DH (2 meatless days in a row), but I need to clear out the veggie supplies so it will be a spicy tofu and veggie stir fry over brown rice.

In all fairness he said he really liked the lentil/mung beans last night and went back for seconds.

I went to Trader Joe's yesterday and bought their frozen noodles in clam sauce packets. I had one of them for lunch and will probably have another for dinner (they are pretty tasty and hearty), along with some shrimp tempura (also from Trader Joe's).

Took out chicken for stir fry instead of tofu. I'll velvet the meat.

Tonight we are having garlic/butter pork chops seared in my cast iron skillet; colcannon potatoes; corn on the cob; and apple pie cupcakes for dessert.

I have almost half a flank steak leftover from the weekend - it will either become tacos or steak sandwiches on sourdough.
