I'm paying for playing hooky while the fresh veggies piled up. Between what caught DH's eye at the Farmer's Market and what friends have gifted us I'm juggling several projects.
The last watermelon was so perfect and plump-skinned that I decided to make a few half-pints of watermelon pickles. So many of the ones I've gotten this year barely have any white flesh on them at all. A deal for the eaters but no good for picklers.
Haven't pickled in years. It's a wretched time of year to do it. But it's nice to have a little dish of home-canned pickles on the table for company or to give as gifts.
Have the brining started today and will finish up tomorrow night. I make them with cinnamon oil and clove oil so that the liquid is crystal clear and the taste is bright. Had some trouble finding food grade oil. I've been looking at some vintage recipes and some of the directions are a bit hair-raising. Too much salt, pickling lime (calcium hydroxide) for crisping, over-processing. Things have really changed.
Stuffed baked potato soup with the last of the special bacon we bought for BLTs and Vidalia onions. Zucchini, cheese, tomato casserole with garlic croutons.
Probably will have to freeze some food and the tomatoes which are starting to ripen fast now.
No sign of Bachelor Son at present to help out with extra. He's either working his buns off or sneaking a few hooky days too.
Neighbor brought back empty plate from plum cake and said, "It's empty now. Can you fix that?" LOL It was an especially good recipe, the cardamom was fresh-bought and the plums were very good.
She's a single grandma and I keep her stocked with dessert. One of my taste-testers.
